Grumeti Reserves is looking for highly qualified and motivated candidate to be
recruited for the position of Senior
Chef de partie
Scope
of work
In
broad terms the Chef de Partie oversees the following key result areas:
·
The
Senior chef de Partie provides a service to the kitchen department
·
All
kitchen equipment must be cared for with breakage kept to an absolute minimum
·
Responsible
for the preparation of the assigned menus as well assisting in the management
of the kitchen under the sous chef & assumes complete responsibility for
the kitchen in his/her absence.
·
Any
equipment maintenance issues must be reported to the head and sous chef or lodge manager in the absence
of
the head chef immediately
·
To
ensure that the kitchen is supervised & that quality
food is produced in a hygiene
environment in line with the SGR Standards
·
Responsible to continually grow the junior kitchen staff
and him/her in terms of kitchen knowledge and skills and to discuss any
training requirement with the head chef as well as instill a sense of
discipline.
·
Has
to carry out assigned kitchen
duties as is accountable to the sous chef or the lodge
manager and executive chef in his/her absence
·
Must
implement and adhere to hygiene standards
·
Portion
control, stock control and stock rotation must be exercised according to the
number of guests dining and stock
rotation in terms of mise-en-place used in preparation of dishes, taking into
account the length of guest stay
·
Must
ensure the role in the recycling process and the process is carried out by
fellow staff member
·
Achieving
service excellence though Teamwork
As
such the person filling this position needs to have:
1.
A minimum of 5 years cooking experience in
a similar environment
2.
Understanding of kitchen procedures and
timing requirements and the ability to plan accordingly
3.
A passion for chefing and kitchen-related
duties and be determined to grow in this area
4.
Good communication skills
5.
Understanding of health and hygiene issues
6.
The ability to deal with constructive
criticism
7.
Knowledge of safety procedures and the use
of firefighting equipment
